What Are Nutrients?
Nutrients are the chemical substances in food products that an organism requires for energy, growth, tissue maintenance, and the regulation of metabolic processes. In human nutrition they are conventionally divided by the quantity the body needs: macronutrients, consumed in gram amounts, and micronutrients, needed in milligram or microgram amounts. A nutrient is termed essential when the body cannot synthesize it in sufficient quantity and it must therefore come from the diet, a category that includes nine amino acids, two fatty acids, thirteen vitamins, and a set of minerals and trace elements.
Water is usually counted alongside these as a nutrient in its own right, since it carries solutes, regulates temperature, and participates directly in hydrolysis reactions. Dietary fiber sits in a separate category: it is largely indigestible by human enzymes, yet it shapes gut transit, glycemic response, and the composition of the intestinal microbiota.
Macronutrients
Carbohydrates, lipids, and proteins supply the chemical energy that drives metabolism, measured in kilocalories or kilojoules. As the U.S. Department of Agriculture's National Agricultural Library summarizes for macronutrients, carbohydrates and protein each provide roughly 4 kilocalories per gram while fat provides about 9. Their roles extend well past fuel. Protein supplies the amino acid pool used to build enzymes, transport molecules, and structural tissue. Lipids form cell membranes, carry the fat-soluble vitamins A, D, E, and K, and serve as precursors for steroid hormones and signaling molecules. Carbohydrates, particularly glucose, are the preferred substrate for the brain and for red blood cells, which is why the body maintains blood glucose within a narrow range through hepatic glycogen and gluconeogenesis.
Micronutrients
Vitamins and minerals participate in metabolism catalytically rather than as fuel, and deficiency in even a single one can produce a distinct clinical syndrome. Water-soluble vitamins including the B complex act mainly as enzyme cofactors and are excreted rather than stored, so intake must be regular. Fat-soluble vitamins accumulate in liver and adipose tissue, which raises the possibility of toxicity at high supplemental doses. Major minerals such as calcium, phosphorus, potassium, sodium, and magnesium maintain skeletal structure, fluid balance, and membrane potential, while trace elements including iron, zinc, iodine, selenium, and copper occupy the active sites of specific proteins.
Reference Intakes and Food Composition
Quantitative nutrition rests on two reference systems. The Dietary Reference Intakes developed by the National Academies define an estimated average requirement, a recommended dietary allowance, an adequate intake, and a tolerable upper intake level for each nutrient, along with acceptable macronutrient distribution ranges; the nutrient recommendations compiled by the NIH Office of Dietary Supplements collect these values in one place. Alongside them sit food composition databases, which report measured nutrient content per unit mass of specific foods. Analytical methods behind these values include Kjeldahl or combustion nitrogen analysis for protein, solvent extraction for fat, and chromatographic and mass spectrometric assays for individual vitamins, with near-infrared spectroscopy increasingly used for rapid screening in industry.
