What Is Horticulture?
Horticulture is the branch of agricultural science and industry concerned with the intensive cultivation of garden crops, which include fruits, vegetables, nuts, flowers, ornamental plants, turf, and culinary and medicinal herbs. It is distinguished from agronomy, which deals with extensively grown field crops such as wheat, maize, and soybeans, by the higher value and higher labor and management input per unit area of the crops involved. Horticultural production covers the full chain from propagation and nursery stock through field or protected cultivation, harvest, postharvest handling, storage, and marketing. Because most horticultural products are perishable and are graded on appearance as well as nutritional content, quality control occupies a larger share of the discipline than it does in commodity grain production.
The field draws on plant physiology, genetics, soil science, plant pathology, entomology, and increasingly on control engineering, sensing, and data analysis. Its scope also includes the non-food side of the industry: landscape design and management, arboriculture, turfgrass science, and the social and therapeutic uses of plants.
Branches of the Discipline
Horticulture is conventionally divided by crop group. Olericulture covers vegetable crops, pomology covers fruit and nut trees and vines, and floriculture covers cut flowers, potted plants, and bedding plants. Viticulture, the cultivation of grapes, is often treated as a discipline of its own because of its links to enology. Ornamental horticulture and landscape horticulture address woody nursery stock, turfgrass, and the design and maintenance of planted spaces. Each branch shares a common physiological base but develops its own agronomic practice, since the flowering behavior of a chrysanthemum and the dormancy requirement of an apple rootstock pose different management problems.
Propagation and Crop Improvement
Most horticultural crops are propagated clonally rather than from seed, so that every plant in an orchard or nursery block carries an identical genotype. Cuttings, layering, division, grafting onto selected rootstocks, and micropropagation in sterile tissue culture are the standard methods. Grafting in particular allows a scion chosen for fruit quality to be combined with a rootstock chosen for disease resistance, vigor control, or soil tolerance. Breeding programs depend on conserved genetic resources, and repositories within networks such as the USDA Agricultural Research Service subtropical horticulture program hold germplasm collections of tropical fruit, palms, and ornamental species used to develop new cultivars. Marker-assisted selection has shortened the long generation intervals that once made tree fruit breeding a career-length undertaking.
Protected and Controlled Environment Production
A growing share of horticultural output comes from structures rather than open fields. Controlled environment agriculture spans a range from shade cloth and high tunnels through glasshouses to fully enclosed vertical farms, with temperature, humidity, carbon dioxide concentration, and light regulated to a setpoint. Soilless culture is common in these systems, with hydroponic beds circulating nutrient solution around bare roots and aeroponic systems delivering it as a mist. Light-emitting diode fixtures allow the spectrum and photoperiod to be tuned to a crop's photoreceptor responses, which shifts flowering time and leaf morphology. Cultivars bred for field performance often behave poorly indoors, so breeding specifically for controlled environments has become an active research area, targeting compact architecture, low light saturation points, and tolerance of continuous illumination.
